How to cure a calabash mate gourd?
The curing process consists in sealing the calabash interior in order to prevent it´s woody stem from shedding components that could alter the flavor of the infusion. We suggest you the following steps to cure ypur Huayra mate gourd:
1. Fill ¾ parts of the mate gourd with yerba mate
2. Add water at 80°C until all the yerba mate is wet
3. Let it stand in a ventilated place for 12 hours
4. Remove the yerba mate with a spoon and scrape all the inner walls of the calabash
5. Repeat the process until the yerba mate has penetrated in all the pores, leaving the inner walls of the calabash in a uniform green color
6. Rinse the mate gourd with cold water and let it dry in the sun
7. Your mate is ready to be used. Enjoy it!
